Thai Chicken Wraps

This one is going down as an all time favorite, no doubt!  All the flavors just mixed together so flipping well … lime, garlic, cilantro, coconut, oh my!  And our bellies are feeling so satisfied and light.

I was inspired by Paleo Plan for this recipe, but tweaked it just a bit to get it oh-so-right!  Hope you like it too!

What you’ll need:

  • 2 – 3 chicken breasts, diced
  • 1 cup finely chopped broccoli
  • 1 cup finely chopped cabbage
  • a handful of chopped green onion
  • a handful of chopped cilantro
  • romaine lettuce leaves, washed
  • coconut oil
  • paprika
  • sea salt

Thai Sauce

  • 1/4 cup almond butter
  • 1/4 cup water
  • minced garlic to taste (we only used 1/2 clove)
  • juice from 1 lime
  • 2-3 tbsp coconut milk

What you do:

  • fry the chicken in coconut oil (oh yum, this gives the chicken the best flavor)
  • season with sea salt and paprika
  • chop veggies
  • mix together all the sauce ingredients
  • fill the romaine lettuce leaves with chicken and veggies
  • drizzle with thai sauce
  • love.every.bite.

    • Cool! This will be fun to eat for Kent and Reed too I think. You know, it’s like interactive eating, and you get to use your hands! Kind of like tacos.
